Easy Vegan Recipes | Amino Mantra

There are more ways to eat a vegan pattie than in a burger. This recipe is a fun, fresh alternative to your classic pattie use. It’s super simple to make and ingredients can be subbed for whatever you have on hand (there’s nothing worse than going to make a recipe and not only missing one item!). No need for a supermarket trip, the salad can include any vegetables of your choosing.This recipe was created by talented Tess Eden @eden-vegan.com.

This dish was created by Tess Eden @eden.vegan on Instagram with her own vegan take on the summer BBQ time! Save this Pita pattie smash recipe for a quick easy meal that can be made on the BBQ to wow your guests or please yourself!

You can literally add whatever you want but here’s our ingredients.

Meals served: 2 Servings

Ingredients

  • 1 cup of roasted pumpkin (if you roast a whole pumpkin keep the rest for other delish meals)
  • 1 eggplant cut in half, then hollow- keep the sides intact. Keep the stuffing to fry for the rest of the dish.
  • 300g of fried button mushrooms
  • 2 shallots
  • 2 cloves of garlic
  • 1 fresh chilli – optional
  • Eggplant stuffing cut into small cubes and fry with the rest of ingredients
  • Pinch of salt & pepper
  • 2 Amino Mantra Black Truffle and Thyme Patties
  • Basil for garnish
  • Dairy free/Vegan Parmesan cheese

Method

  1. Salt eggplant & let stand for 10 minutes to make the eggplant softer. 
  2. Put all of the ingredients except for basil & cheese on frying pan & mix together for 5-10 mins or until eggplant and mushrooms are soft then spoon into eggplant.
  3. Put the eggplants on a baking tray.
  4. Bake for 30 mins – adding cheese 5 minutes before taking it out.
  5. Add basil on top.

Crumbed Caramelised Garlic and Chives Gluten-Free Vegan Albondigas wit | Amino Mantra

Ingredients

  • Garlic cloves                                                                   2
  • Big shallots                                                                     1
  • Spring onions                                                                  2
  • Red chillies                                                                     2
  • Large mushrooms                                                          5
  • Tofu (grated)                                                                   350g
  • 2 Amino Mantra Caramelised Garlic & Chive patties     2  
  • 5 tbsp Ceres Organics Jasmine Rice Crumbs               5 Tbsps
  • Hass Avocado                                                                1
  • Chilli sauce                                                                     2 Tbsps
  • Salt & pepper to taste                                                                 

Method

  1. Preheat oven to 180 degree Celsius fan-bake. Line a baking tray with baking paper.
  2. Finely chop all ingredients. Cook garlic, shallots, spring onion, chillies & mushrooms and a pinch of salt and pepper for 4-5 mins until soft.
  3. Add grated tofu, 2 crumbled Amino Mantra Caramelised Garlic and Chive Patties & 2 tbsp of Rice Crumbs. Cook further for 4 minutes.
  4. Transfer the cooked mixture into a bowl, let it cool down. Add 3 heaped tbsp of Jasmine Rice Crumbs to a separate bowl. Use mixture to make large balls & roll them in the crumbs.
  5. Place on tray. Put in oven for 5-10 minutes.
  6. Serve with sliced avocado and chilli sauce or anything you like.

Creamy Cauliflower Soup with Caramelised Garlic & Chive Patties | Amino Mantra

Meals served: 2 Servings

Ingredients

– Amino Mantra Garlic & Chive  Plant Patties             2 Patties 

– Cauliflower large florets &                                        1ea Small head

   chop the soft top part of the stem 

– Brown onion sliced                                                    ½ Onion

– Vegetable stock or water                                           750mls

– Plant-based milk (Soy, Rice, etc.)                             250mls

– Olive oil                                                                     1tbsp

– Salt & Pepper                                                            To taste

(Optional)

-Fresh herbs (Rosemary, Thyme, Chives, etc.)           3-4 sprigs

-Sliced Baguette (or Gluten-free option), Toasted        2 slices

Special equipment:

-Stick Blender or Blender

Method

  1. Bring a large pot or soup pot to a medium heat. Add the oil and add the sliced onions with it. Saute for a minute till translucent.
  2. Crumble 1x Garlic & Chive pattie into the pot and saute for 2 minutes, stirring making sure it doesn’t stick to the pot. Saute till lightly browned.
  3. Add the cauliflower florets and the chopped stems. And saute for 2 minutes.
  4. Add the vegetable stock and bring to a boil. Once it comes to a boil, reduce the heat to simmer. Cover the soup with a lid and let it simmer until the cauliflower is cooked through.
  5. While the soup is simmering, heat oil in a small fry pan. Sear the 2nd Garlic & Chive pattie on both sides for 2 -3 minutes until golden brown. You can cook it for longer if you like the surface crispy.
  6. Once the cauliflower in the soup is soft, using a stick blender, blend the ingredients in the pot until it’s creamy. If using a regular blender be cautious when blending hot soup. Cool down the soup a little before blending. Add pureed soup back to the pot and adjust seasoning with salt and pepper, and consistency with plant-based milk of your choice – soy, rice, almond, etc.
  7. Cut the 2nd Garlic & Chive pattie into small cubes for garnish. Serve the soup in a bowl and place the cubes on top. Garnish with toasted sliced bauguette or suitable gluten-free substitute and sprig of herbs. Your soup is ready to eat.
