Fijian Turmeric & Cumin Plant Patties With Roti & Vegan Curry Sauce | Amino Mantra

Difficulty Level: Easy

Total time: 15 mins

Meals served: 4

Ingredients:

– Amino Mantra Fijian Turmeric & Cumin Plant Patties    4 patties

– Pataks Indian Korma curry paste    3 tablespoons

– Ready-to-eat Rotis (or Gluten-free option)    4 parathas

– Mango Pickle    1 tablespoon

– Raglan Coconut Yogurt Natural Greek style yogurt    2 tablespoons

Garnish:

– Fresh Lemon Wedges    2 wedges

– Fresh Coriander sprigs    3 sprigs

– Freshly sliced Red chillies    ½ teaspoon

Method:

  1. In a pot, heat up Pataks Indian Korma curry paste with 100ml water till the mixture starts to boil. Take it off the heat and serve in a bowl as a dipping sauce.
  2. On a medium hot fry-pan, grill Rotis evenly on both sides till golden brown. Serve them on a plate.
  3. On a medium hot fry-pan, sear Amino Mantra Fijian Tumeric & Cumin plant patties for 2-3 minutes each side till golden brown & crisp. Cut them up in half & serve.
  4. Garnish with lemon wedges, coriander sprigs & fresh red chillies. Serve with mango pickle for the tang and Raglan Coconut Yogurt Natural Greek yogurt to cool down the heat!!

There are more ways to eat a vegan pattie than in a burger. This recipe is a fun, fresh alternative to your classic pattie use. It’s super simple to make and ingredients can be subbed for whatever you have on hand (there’s nothing worse than going to make a recipe and not only missing one item!). No need for a supermarket trip, the salad can include any vegetables of your choosing.This recipe was created by talented Tess Eden @eden-vegan.com.

This dish was created by Tess Eden @eden.vegan on Instagram with her own vegan take on the summer BBQ time! Save this Pita pattie smash recipe for a quick easy meal that can be made on the BBQ to wow your guests or please yourself!

You can literally add whatever you want but here’s our ingredients.

Difficulty level: Medium 

Total Time: 45 mins

Meals served: 2 Servings

Ingredients

  • 1 cup of roasted pumpkin (if you roast a whole pumpkin keep the rest for other delish meals)
  • 1 eggplant cut in half, then hollow- keep the sides intact. Keep the stuffing to fry for the rest of the dish.
  • 300g of fried button mushrooms
  • 2 shallots
  • 2 cloves of garlic
  • 1 fresh chilli – optional
  • Eggplant stuffing cut into small cubes and fry with the rest of ingredients
  • Pinch of salt & pepper
  • 2 Amino Mantra Black Truffle and Thyme Patties
  • Basil for garnish
  • Dairy free/Vegan Parmesan cheese

Method

  1. Salt eggplant & let stand for 10 minutes to make the eggplant softer. 
  2. Put all of the ingredients except for basil & cheese on frying pan & mix together for 5-10 mins or until eggplant and mushrooms are soft then spoon into eggplant.
  3. Put the eggplants on a baking tray.
  4. Bake for 30 mins – adding cheese 5 minutes before taking it out.
  5. Add basil on top.

Our Journey | Amino Mantra

Hello world,

We are Amino Mantra and this is our first blog. We would like to tell you about our journey and the reason why we started making wholesome, plant patties. 

Like most businesses, our story started with a series of experiences and frustrations, until we finally decided to do something about it.

For us, it began after long periods of feeling particularly run down and overwhelmed. We began assessing what we were eating, the stress we were enduring, and the impact this was having on our health.

Having both worked in the food industry for a long time, we knew first hand the amount of  chemical and additives used in processed food. Although scientific research proclaims that these chemicals and additives are not toxic at low quantities, no one has proper studied the long-term effects of these chemicals and how they accumulate in our body over time.

But the problem goes beyond food to the air we breathe, the environment we live in, the water we drink and the pollution from the food industry.

After we had our baby, we became determined to make a difference for ourselves and for our next generation. We started to do research and began practicing a zero waste lifestyle. We’ve learnt more about  a plant based diet and how it could help us and the environment. This gave rise to our next problem. We found it difficult to find easy plant based alternatives without the processed ingredients, we were trying hard to avoid. Most still contained highly processed ingredients such as extracted gluten, texture modified proteins, protein isolates and derived gums. With our food science background, we knew how much chemicals are used to get those processed materials out. 

So we started to create our own plant based food using our skills in food science and culinary art to ensure we had tasty, nutrient dense food.

We felt better after changing our diet and enjoyed eating the food we were making. As we watched more of our friends shift to a plant based diet and experience the same problems, we realised our products could add value to their lives too. We became determined and passionate to bring our products to the market. With that Amino Mantra was born.

We chose to name our business Amino Mantra, because we focus on nutrition, the essential nutrients, and a way of living that is better for people and the planet. We are not only providing a product, we are sharing how a plant based diet can empower people to make positive impacts on our health and the environment.
